Shakshuka with Avocado Toast

This reinvented Middle Eastern staple, infused with Andy's signature culinary style, boasts a richly spiced tomato base enveloping softly poached eggs, complemented by creamy avocado slices on golden, toasted sourdough. Ideal for a leisurely weekend breakfast or a festive brunch occasion, this shakshuka recipe not only pleases the palate but also adds a dash of color and culinary excitement to your morning routine.This recipe is designed to impress!

Shashuka by Look's Marketplace

Ingredients:

  • 1 onion, diced

  • 1 bulb of garlic, minced (about 3 cloves)

  • 4 farm-fresh eggs (or as many as your pan allows)

  • 1 bell pepper, diced

  • 1 avocado, sliced (optional)

  • Fresh cilantro, chopped

  • Baby spinach

  • Spices: cumin, paprika, cayenne pepper

  • Enzo medium olive oil

  • Feta cheese, crumbled

  • 1 can Bianco DiNapoli tomatoes

  • Harissa paste

  • Salt and pepper, to taste

  • Look’s Market sourdough bread, grilled or toasted

Instructions:

  1. Prepare the Vegetables:

    • Dice the onion and bell pepper. Set aside in a bowl.

    • Give the garlic cloves a whack, peel, and mince.

  2. Sauté the Vegetables:

    • Heat olive oil in a pan over medium heat.

    • Add the onions and peppers, sautéing until they begin to sweat.

    • Add the garlic and all the spices, continuing to sauté until fragrant.

  3. Cook the Shakshuka Base:

    • Stir in the harissa paste, then add the canned tomatoes.

    • Let the mixture simmer for about 15 minutes.

    • Season with salt and pepper.

    • Add the baby spinach, cooking until it softens.

  4. Poach the Eggs:

    • Create divots in the mixture with a spoon and crack the eggs into them.

    • Cover the pan, reduce the heat, and cook for about 6 minutes (or until the eggs reach your desired doneness).

  5. Garnish and Serve:

    • Sprinkle feta cheese and chopped cilantro over the shakshuka.

    • For the avocado toast, top grilled or toasted sourdough slices with avocado and a poached egg from the shakshuka.

    • Ladle some of the shakshuka’s braising liquid over the toast, and add additional feta and cilantro.
