The cheese is made from high-quality milk of Holstein cows, known for its rich and creamy properties.

The aging process of Cabot Clothbound Cheddar is unique. Wrapped in cloth, a traditional method for aging cheddars, the cheese is then aged in the Cellars at Jasper Hill for 10 to 14 months. This method allows the cheese to breathe and develop a complex flavor profile. During this time, the cheese acquires a distinctive taste, balancing sweet, nutty, and tangy notes, with a hint of caramel and a savory finish.
