Ingredients:
1.5 pounds Look’s Marketplace chicken fajita mix
1 avocado
1 lime
1 package La Perla tortillas (8-10 tortillas)
1 container Kalona sour cream
1 package La Perla Spanish rice
1 package La Perla beans
1 package Tillamook Triple Cheddar cheese, shredded
Neutral oil (for cooking)
Salt and pepper (to taste)
Instructions:
Prepare the Vegetables:
Cut the lime into wedges.
Slice the avocado in half. Remove the pit and scoop out the flesh with a spoon. Slice the avocado and set it on a plate.
Season the avocado slices with a little salt and pepper.
Cook the Rice and Beans:
Cook the La Perla Spanish rice according to the package instructions.
Warm the La Perla beans in a separate pot or microwave according to the package instructions.
Cook the Chicken Fajitas:
Heat a pan with a little neutral oil until it starts to smoke.
Add the chicken fajita mix to the pan. Cook in two batches if necessary to achieve good caramelization.
Stir occasionally and use a spoon to scrape up any browned bits from the bottom of the pan.
Once the chicken is cooked through and caramelized, remove from the pan.
Warm the Tortillas:
Wrap the La Perla tortillas in a piece of aluminum foil and warm them in the oven or on a dry skillet over low heat.
Assemble the Fajita Bar:
Arrange the warm tortillas, cooked chicken fajitas, Spanish rice, beans, shredded Tillamook Triple Cheddar cheese, and sour cream on a serving table.
Place the avocado slices and lime wedges alongside.
Serve:
Serve the fajitas buffet-style so everyone can build their own tacos with their preferred toppings.
