Ingredients:
2 green bell peppers
2 red bell peppers
1 large onion
3 cloves garlic
2 tbsp Enzo Olive Oil
4 Look’s Marketplace Hot Italian Sausages
2 tablespoons tomato paste
1 cup dry white wine
Looks Bakehouse Sourdough
1 tablespoon dried oregano (or fresh from the herb garden)
Fresh basil (optional, for garnish)
Lemon (optional, for garnish)
Instructions:
Prepare the Vegetables:
Wash and julienne the bell peppers.
Peel and julienne the onion.
Mince the garlic.
Cook the Sausage:
Heat some Enzo Olive Oil in a large pot over medium heat.
Add the Italian sausages to the pot.
Cook the sausages for a few minutes on each side until well-seared. Remove them from the pot and set aside.
Cook the Vegetables:
In the same pot, add the julienned onion and bell peppers.
Season with salt and cook until the vegetables start to soften.
Create a space in the center of the pot and add the minced garlic. Sauté for about 30 seconds, then stir it into the vegetables.
Add Tomato Paste and Deglaze:
Stir in the tomato paste and cook until it starts to brown slightly, creating some brown bits on the bottom of the pan.
Pour in the white wine to deglaze the pot, scraping up the brown bits.
Add the oregano and simmer until the wine has reduced by half.
Combine and Simmer:
Return the sausages to the pot, nestling them into the vegetable mixture.
Cover the pot and let it simmer until the sausages are fully cooked through, measuring 165 degrees with a meat thermometer, about 10-15 minutes.
Prepare the Bread:
Slice the Looks Bakehouse Bread and place it under the broiler or toast it until golden brown.
Slice the Sausage:
Once the sausages are cooked, remove them from the pot and slice them into thirds on a bias.
Plate and Serve:
On a serving plate, place a portion of the pepper and onion mixture.
Top with the toasted bread slices.
Arrange the sliced sausages over the vegetables.
Garnish with fresh basil and a twist of lemon, if desired.
Enjoy:
Serve hot and enjoy your delicious homemade sausage and peppers!
