German Rope Sausage with Barktoberfest Braised Onions


When the leaves start changing and you begin to feel a slight chill to the breeze, you know it’s time to start thinking about heartier, more wholesome foods. One classic and extremely simple recipe takes advantage of our handcrafted German Rope Sausage - packed with the flavors of black pepper, allspice, and nutmeg - and combines it with the deep flavors of our Barktoberfest Oktoborfest Ale, mustard, and onions. A quick, yet flavor packed dinner that can be ready in as little as 30 minutes.


Ingredients:

  • 1 large onion

  • 1 tbsp of stone-ground mustard (preferably Boetje’s) 

  • 1 can Barktoberfest beer

  • 1 Look’s Marketplace German Rope Sausage

  • Butter or neutral oil (for cooking)

  • 2 Look’s Bakehouse Ciabatta Rolls 

Instructions:

  1. Prepare the Onion:

    • Slice the large onion and set it aside.

  2. Preheat the Pan:

    • Place a skillet or frying pan on medium heat.

  3. Cook the Sausage:

    • Add butter or neutral oil to the hot pan.

    • Once the butter has melted or the oil is heated, add the German Rope Sausage.

    • Sear the sausage on each side until you achieve a nice color. Check the underside occasionally to ensure an even sear.

  4. Add Onions:

    • Once the sausage is well-seared, place the sliced onions on top of the sausage in the pan.

    • Let the onions steam for a few minutes, allowing them to absorb the flavors from the sausage and butter.

  5. Deglaze with Beer:

    • Pour in your can of Barktoberfest into the pan with the sausage and onions.

    • Add stone-ground mustard to the onions in the pan.

    • Increase the heat to bring the mixture to a boil, then reduce the heat to simmer.

  6. Simmer and Reduce:

    • Allow the sausage and onions to simmer for a few minutes, letting the onions reduce and caramelize slightly.

  7. Plate the Dish:

    • Transfer the sausage and onions to a plate.

    • Serve with two ciabatta rolls 

    • Enjoy with a glass of Look’s Beer Company Barktoberfest beer!
